Brennan is the
past chairman of the ICC (Island Chefs
Collaborative - a membership of Vancouver Island chefs committed to promoting and using locally produced products)
and has been dedicated throughout the past fifteen years of his career to sourcing and utilizing the best of
BC's bounty. He has worked at The Raintree Grill in Vancouver, been part of the opening team of the Wildflower Café
at Chateau Whistler, and has opened the Harvest Moon, The Met Bistro and Café Brio in Victoria. As an avid crusader
for the use of locally grown, preferably organic, seasonal fare cooked using traditional, classic European techniques
Brennan has won many followers and accolades including; Most Popular Restaurant (Café Brio) - Zagat Guide
2000, People's Choice 2000 - Victoria Newsgroup.
