Although in the past we have been booked up every night we found that we often had numerous empty tables due to reservations not showing up or to customers eating faster than the time anticipated. Our restaurant is too small (we only have 13 tables) to have empty seats. Having such a small space also leads to the opposite problem with customers having to wait too long at the door for their reserved table if previous customers are taking longer to dine than anticipated.

We want our restaurant to be accessible not one that is elite. We want the Brasserie to be more of a neighborhood bistro and less of a dining destination. We don't want the Brasserie to be a fine dining establishment that requires booking a month in advance. We realize that we will alienate some customers, particularly special occasion diners (birthdays and anniversaries) but we will be able to accommodate more people who are looking for a simple, classic bistro meal.

We will not be expecting customers to stand in line to wait for a seat but will use a waiting list (essentially a short-term reservation) so that if there is not a table available we will take your name (and maybe a cell phone number) so that you are free to walk the neighborhood or go across the street for a cocktail or aperitif.
